Notes from the Field

Beta Vulgaris is the family (genus and species name) that connects beets and swiss chard.  The stems and leaves of beets were selected over time for color, stem, and leaf, producing swiss chard.  One may distinguish the stem and leaf flavor as "earthy", though I find that stems of beet greens are sweeter (I think this is due to the purpose of growing a sweet root.)  Please enjoy.  See Creamy Swiss Chard with Coconut recipe.

Summer squash/zucchini season is rounding the corner here; we are eager for cucumbers and beans.  Over time you all are receiving the beginnings of the roots: beets and potatoes.  Carrots in August.  Yum.  THANK YOU!
