What it means to bud and sprout?

What it means to have wintered over and be beginning to pop?  For some to be thinking about growning and setting up for seed production...

The tidings of spring fill your bags with the last of the winter roots and the beginnings of spring's greenings.  Yellow carrots, fingerling potatoes, the last of the yellow onions and garlic, enlivened with a pea/sunflower shoot mix and either kale or spinach - field grown, over-wintered; and scallions!  Oh, the tricks of a farmer, all in hopes of pleasing yiour end-of-winter pallet.

Roast or mash the potatoes and toss in some chopped green onion and scallion.... don't forget a little cream...

Make a lovely pan saute with onions, yellow carrots, fresh pork; lightened by slightly wilted greens and fresh scallions... ad different spice blends such as cumin and a touch of cinnamon and cayenne; or splashes of lime and maple syrup.  Yum!
